BAKED FLUKE FILLETS

This easy recipe highlights the natural flavor of savory summer flounder.

BAKED FLUKE FILLETS

Serves: 4-6

Ingredients:

  • 1 fluke (about 2-1/2 lbs.)
  • Salt and pepper to taste
  • 1 lemon
  • 1 teaspoon minced garlic
  • 1 teaspoon finely chopped parsley
  • 1 tablespoon butter

 

Directions:
Place the fillets in baking pan. Sprinkle with salt and pepper. Top with garlic and parsley and set a dab of butter in the center of each fillet. Cut the lemon into paper-thin slices and arrange over the fillets. Dribble a little water into the pan – just enough to cover the bottom. Bake in a preheated oven set at 425 degrees for 7 to 10 minutes for every inch of thickness. Test for doneness.
