FISH CAKES

A little bit of codfish can go a long way with this scrumptious recipe.

FISH CAKES

Serves: 4-6

Ingredients:

  • 1-1/2 cups cooked, flaked codfish
  • 1-1/2 cups mashed potatoes
  • 1 egg, beaten
  • 1 tablespoon finely minced onion
  • 1 tablespoon grated Parmesan cheese
  • Salt and pepper to taste
  • Flour
  • Oil
     

Directions:
In a large bowl, combine the flaked codfish, mashed potatoes, egg, onion, Parmesan cheese, salt and pepper. Mix until thoroughly blended, then chill in the refrigerator for about an hour.

Shape the mixture into patties and dredge in flour. Heat a large skillet then add enough oil to coat the bottom of the skillet. Fry the patties on both sides until golden brown. Drain and serve with a creamy sauce.
