CODFISH AND LINGUINE WITH OIL AND GARLIC

Serves: 4-6
 

Ingredients:

  • 1 lb. linguine
  • 1/2 lb. codfish fillets, cut into cubes
  • 8-12 cloves garlic, whole
  • 1 cup olive oil
  • 1 tablespoon fresh chopped parsley


Directions:
In a frypan, heat the olive oil, then quick fry the codfish cubes until lightly browned – no longer! Set the fried codfish aside.

Prepare the linguine as described in the previous recipes. Drain and heap on a large platter. Brown the garlic in the same oil where the fish were fried. Remove from the heat and pour the oil and garlic over the linguine. Add the fried codfish and toss lightly. Sprinkle on the parsley and toss again. Top with grated Parmesan cheese and crushed red pepper. Serve immediately – this dish becomes gluey if allowed to sit for too long a time before serving.
