A choice sandwich for fish lovers.

After a long night of fishing, one of my favorite morning or early afternoon meals has to be a fish salad sandwich made with one of my recent catches. You can make this dish with several different species but for this recipe I used sea bass I caught recently. It’s also a great alternative if you’re a fan of tuna or whitefish as well.

This sandwich goes well with the addition of tomato, onion and avocado. I personally like the onion and avocado combo but you can make it your own. The final fish spread can be put on a toasted bagel of your choice.

The whole dish takes no more than 10 minutes to put together and doesn’t require a lot of fish or many ingredients. A little prep the night before makes the process easier in the morning.  Consider the following recipe good for a single sandwich.

Ingredients

1 fish fillet (no bones)

1 bagel

2 tablespoons of mayo

3 slices of red onion

3 slices of avocado

Salt and pepper to taste

Step 1

Start by bringing a pot of water to a boil. You should use about 2 to 4 cups of water depending on fillet size. Boil the fillet under it turns white in color and flakes apart easily. Usually the fish will cook in about 5 minutes. Run the cooked fillet through a strainer to remove all the water.

Step 2

This is the step where you have to decide what works best for you depending on your time. You can take the dried fillet and put it in the refrigerator overnight to chill or if you want to fast track the process you can keep the fillet in the strainer and run cold water over it until it cools down. Then dry the meat, put it into a bowl and let it sit in the freezer for 15 minutes.

Step 3

After you have chilled down the fish you’re ready to add the ingredients. Start with the mayo and then salt and pepper to your liking. Mix all these in a bowl until the fish is broken apart and the consistency is the same throughout.

Step 4

The final step is to toast your bagel of choice; personally I like an “everything” bagel. Put your fish spread on the bagel and add toppings of choice. This sandwich served with a cold brew coffee on a warm summer morning is one of my favorite ways to start the day.
