From The Galley: Horseradish Maple Crusted Salmon

A new spin on salmon that almost everyone will like.

A hot, yet sweet salmon dish that will make you want seconds.

While I’m not the biggest fan of salmon myself, this mix of ingredients gave me a whole new outlook on eating this fish. The kick of the horseradish combined with the sweetness of the honey mustard and maple syrup is a unique flavor and is really tasty. Baking the fish on a bed of onions adds additional flavor the whole meal.

INGREDIENTS FOR AIOLI SAUCE

1/3 cup of mayonnaise

1 heaping tablespoon of horseradish

2 tablespoons of honey mustard

2 tablespoons of maple syrup

Start off by mixing the aioli ingredients in a bowl and set aside in the fridge for later use.

ADDITIONAL INGREDIENTS

1 pound of salmon filet

1 cup of diced onion

2 tablespoons of olive oil

1 teaspoon of diced parsley

1 teaspoon of lemon zest

Salt and pepper to taste

Add onions to a parchment lined pan. Drizzle with olive oil and season with salt pepper and parsley along with the lemon zest and mix everything thoroughly in the pan. Spread out the onion mix on the tray evenly and then lay the salmon, skin side down on top. Pour the aioli mix on top of the salmon until it’s all covered in the glaze. Bake the salmon and onions uncovered at 350 degrees for 25 to 30 minutes. Let cool and enjoy.
