Roz’s Cod

This cod recipe was given to me many years ago, by my good friend Roz. I have known Roz since high school, she was an attendant in my wedding party and happens to be the godmother of my son Michael. She is a fabulous cook, and this cod recipe is an excellent dish to serve for a dinner party. The cod is so flavorful, and I am sure this will be one of your “go to” recipes.

INGREDIENTS:

2 lbs. Cod
(approximately 4 servings)
4 tbsp. of butter
1 tbsp. of olive oil
1 tsp. of salt
1/2 tsp. of pepper
2 tbsp. of chopped parsley
2 tbsp. of chopped scallions
1 tsp. of dried oregano
1/4 cup of white wine
1/3 cup of breadcrumbs
2 tbsp. of grated parmesan cheese (optional)
16 oz. can of diced tomatoes or 5 fresh chopped roma tomatoes

INSTRUCTIONS:

Preheat the oven to 400 degrees.

Rinse the fish off in cold water and pat dry. Place the cleaned fish in a baking dish. Season the fish on both sides with salt, pepper, oregano and olive oil. Add the butter, white wine, parsley, scallions, tomatoes, breadcrumbs and then parmesan cheese.

Bake 20 to 25 minutes or until done. Add a drizzle of olive oil on top layer and broil for 2 minutes until breadcrumbs turn a golden brown.
