Fish Surprise
An easy and effective way to plate fresh fish right off the grill this summer.

Surprise family and friends this summer with a wrapped gift from the grill.

With summer officially here and a variety of angling options available, here is a simple dish that makes for easy cleanup as it’s cooked and served in the same disposable container. Best of all, it’s a great way to cook up flaky white fish on the outside without making a mess of the grill.

I have also used blackfish, striper, and cod, but the fillets must be rather thin; I would not recommend bluefish or tuna.  Be sure to use heavy duty foil and prep your vegetables in advance so there is little to be done when ready to cook.

We like this with company, letting them select their own ingredients for their packets. The fun comes in using the vegetables and spices that you want.

 

1/2-pound fish fillet per person                          White wine, sherry, or water

Heavy-duty aluminum foil                                     Butter or butter spray 

Thin sliced onions                                                       Lemon wedges

Sliced mushrooms                                                                        Spices (salt, pepper, parsley, garlic, dill 

Thin slices of tomato                                                                   Parmesan cheese, or experiment)

 

Pre-heat the oven to 350 degrees. Cut a piece of foil large enough to hold fish and assorted vegetables so the ends of foil can be folded together into a sealed pack. Butter or spray the bottom of the foil and add the fish. Put 2 tablespoons of wine or water on top and add vegetables. Be adventurous with others such as peppers or zucchini. Slicing the vegetables thinly assures they cook through.

Season lightly with salt, pepper, and the spices of your choice. Fresh spices are best, but dried will suffice. Place a pat of butter on top or spray with butter spray. Fold up the packet tightly and bake in the pre-heated oven for no more than 20 minutes. Place the packet on a plate and serve. Open carefully due to escaping steam. Placing the cooked fish on a plate can also be done.

You can cook the packets on an outside grill. Pre-heat the grill and turn to a low setting. Place the packet on a rack several inches from heat. Close the cover and cook 15 to 20 minutes depending on thickness of fish.

Use enough foil to hold fish and assorted vegetables so the “package” ends can be folded together to seal in the heat and flavor.
