As fluke season winds down, you may already have a stash of fillets on hand. If you don’t, now is a good time to put some away before the season shuts down. This simple recipe is quick, with hardly any prep and just a handful of simple ingredients that you’re likely to have sitting in the cupboard.

INGREDIENTS:
2 pounds fluke fillets
2 tbsp minced garlic
½ cup lime or lemon juice
(not from concentrate)
½ cup orange juice
Fresh parsley (chopped)
Olive oil spray
Paprika
Salt
Pepper

COOKING INSTRUCTIONS:
Into a small mixing bowl, combine garlic, lime or lemon juice, orange juice, dash of salt and dash of pepper. Mix thoroughly. Lightly spray shallow baking tray with olive oil or wipe with olive oil if you have no spray. Place fillets on tray. Pour mixture over fillets. Sprinkle fillets with paprika and top off with chopped fresh parsley. Bake at 350 degrees until fish flakes easily with fork, or broil until fillets start to brown. Serve with rice and garden fresh tomato or cucumber salad.
