The next time you connect with a bluefin tuna, try this. It is my ultimate recipe for bluefin, and one that is sure to impress your dinner guests. Of course, every good recipe starts with how well you care for your catch. Be sure to bleed your tuna and get it on ice or into a cooler of slush ice right away. Prepare it fresh.
4 fresh bluefin tuna steaks (1/2-inch thick)
1 bunch fresh cilantro finely chopped
1 hot pepper (banana or jalapeño). Skip if you don’t like spicy.
2 pressed cloves of garlic
4 limes juiced
1/4 cup of orange or pineapple juice
1 to 2 tablespoons of fresh grated ginger root
1/4 cup of low sodium soy sauce
1/4 cup sesame oil
2 tbsp of black sesame seeds
2 tbsp of white sesame seeds
In a skillet slightly reduce the orange and lime juice, and pour it in a mixing bowl. Wisk all the remaining ingredients together, with the exception of the hot peppers and the tuna. Set aside. Cut the hot pepper into thin circles and brown for a minute or so in a skillet coated with sesame oil. Pour the contents into the cilantro mixture. Wipe and recoat the skillet with sesame oil. Bring up to searing heat. Dust the tuna with sea salt and pepper and sear both sides for approximately 1 to 2 minutes depending on thickness. When flipped, add a thin coating of the cilantro mixture to the cooked side. When the back side is done remove from the heat and let rest for at least five minutes. Cut the avocado and lay slices on top and then drizzle more cilantro mixture on top and serve. Enjoy!
