This time of the year, when the choice of fish we catch is limited to just a couple of species, you might want to consider spending a few bucks at your local fish market on “fresh” salmon. It is often on sale at your local supermarket and can be of surprisingly good quality. If you trek up to the Salmon River area or Alaska at anytime during the year, you can provide your own fresh salmon. Fresh salmon is a healthy food choice but stay away from the farm raised stuff if eating healthy is a consideration. Preparation is simple.
Ingredients:
6 oz. fresh salmon chopped fine
1 tsp. mayonnaise
1 tsp. chopped capers
1 chopped pickle
1/2 lemon
finely sliced red onion
Directions:
Mix all ingredients together with raw salmon.
Place finely sliced red onion on top.
Drizzle olive oil over top.
Serve with fresh warm garlic bread.
