In the Orient it is called stir frying. Western Civilization seems content with the term sautéing, but in either case, it is a quick and efficient method to cook fish. A minimum of oil is used to fry the fish over high heat for a short period of time. The ingredients, which have been cut into bite-size pieces are constantly stirred and turned until done.

INGREDIENTS:
2 lbs. blackfish, sea bass or flounder fillets
1 onion minced
2 scallions cut into strips
2 whole cloves of garlic
1 egg white lightly beaten
2 tablespoons corn starch
Cooking oil
salt
pepper

COOKING INSTRUCTIONS:
Cut the fillets into cubes or strips and combine in a bowl with corn starch, egg white, and salt and pepper to taste. Toss lightly. Heat a skillet or wok and add enough oil to coat the pan. When the oil is hot, put in the garlic and fry until brown. Remove garlic and discard. Add onion and scallions and fry until limp. You may choose to add other vegetables such as bean sprouts, red or green peppers, snap peas, mushrooms, aparagus or green beans. Add fish pieces and stir fry until fish is lightly browned. Remove fish and vegetables with a slotted spoon, allowing the oil to drain. Garnish with lemon wedges.
