Now is the time to feast on fresh cod steaks for anglers in the Northeast, and this simple recipe complements the flaky, white meat that these fish are known for. I prefer steaks of 1 to 1-1/2 inches so that the full effect of the marinade is absorbed by the meat.

INGREDIENTS:
2 codfish steaks – 1 to 1-1/2 inches thick
1/4 cup olive oil
1/2 teaspoon dill
Juice of one lemon
Salt to taste
Pepper to taste

COOKING INSTRUCTIONS:
Prepare a marinade by mixing olive oil, lemon juice, salt, pepper and dill. Set the steaks in a shallow dish and pour marinade over them. Refrigerate for about one hour.
Preheat the broiler and place the marinated codfish steaks on a broiling rack. Brush the steaks with additional marinade. Broil for seven to 10 minutes for every inch of thickness, turning the steaks once halfway through cooking.
