Cod With Crab Meat Topping

Here’s a great recipe for those of you who stocked up on cod this winter, or for those who are working on spring-run fish. If you don’t have cod, any flaky, white meat fish can be substituted.

INGREDIENTS:
1/2 pound lump crab meat
2 pounds cod fillet
1 small yellow onion
taragon
panko bread crumbs
paprika
1 cup (8 oz.) white wine
I large lemon
3 cubes butter

COOKING INSTRUCTIONS:
Saute crab meat and finely chopped onion for about two minutes. Add a pinch of tarragon, a handful of panko crumbs, and a sprinkle of paprika. Spread mixture over fish in a shallow baking dish. Combine and gently heat white wine, fresh squeezed lemon juice and butter in small pot. Pour into baking dish around fish. Bake at 400 degrees for 15 minutes until fish and topping brown. Serve with rice and roasted asparagus. Serves four.
