Codfish, striped bass and sea bass all lend themselves nicely to this recipe. Once cooked, they can also be frozen away for a night that you have little time to prepare a fresh meal. Simply pop them in the oven or the microwave and enjoy.

INGREDIENTS:
2 cups cooked, flaked cod,
striped bass or sea bass
2 cups mashed potatoes
flour
vegetable or olive oil
1 egg beaten
1 tbsp. finely minced onion
1 tbsp. grated Parmesan cheese
salt
pepper

COOKING INSTRUCTIONS:
In large bowl combine flaked fish, mashed potatoes, egg, onion, Parmesan cheese, salt and pepper. Mix until thoroughly blended then chill in refrigerator for about an hour. Shape the mixture into patties and dredge thoroughly in flour. Heat a large skillet with enough oil to coat the bottom of the pan. Fry the patties on both sides until golden brown. Drain and serve.
